Ingredients
1 cup black beans drained and rinsed
1 tablespoon carob powder
1 cup almond flour
2 tablespoons melted coconut oil
1 tsp. chocolate liquid stevia
1/2 can pumpkin puree
1 scoop chocolate peanut butter protein powder
1 bar dark chocolate
Make It Happen
In a small bowl combine almond flour, carob powder and chocolate peanut butter protein powder. Set aside. In a food processor or blender blend black beans for about 1 minute. Add liquid ingredients stevia and coconut oil. Add almond flour mixture to the black beans batter and blend very well. Place mixture in the fridge for about 25-30 minutes. Remove mixture from the fridge. Coat your hands with some coconut oil and roll mixture into balls. Place 1 tsp. pumpkin puree in the middle of each truffle. Once truffles are done place them on a baking sheet. Put in the freezer for 10-15 minutes.
