This plant-based version of a classic Christmas drink will have you wondering why you ever bothered with eggnog. Whether you’re vegan or an omnivore, it’s a healthier alternative to drinking straight hard liquor during the holidays. It’s infused with layers of coffee and cacao with a vague hint of caramel due to the addition of dried dates (as a whole food sweetener) which also makes it one of the only alcoholic drinks that contains fiber. Serve chilled over ice for an after dinner drink or heat it slightly in a saucepan to enjoy while you warm yourself up by the fire. Leftovers can be refrigerated in a sealed glass container for up to 7 days.

INGREDIENTS
3 cups almond milk (homemade recipe here)
6 medjool dates (or 10 deglet noor)
1 tbs coffee
1 tbs cacao powder
½ tsp vanilla extract
2 cups rum or cognac
Blend all ingredients until smooth. Pour through a strainer to remove any date bits that remain.
